Huso huso
Our largest pearl. Beluga sturgeon take close to two decades to mature, and the roe comes from a small number of fish each season. The membranes are thin, so the pearls give way with almost no pressure.
Taste: Buttery and long, with a soft walnut finish and very little brine.
