Premium Kaluga

Huso dauricus × Acipenser schrenckii

A river-sturgeon hybrid that gives a beluga-sized pearl at a gentler price. Firm enough to hold on a blini, soft once it reaches the palate.

Taste: Hazelnut and fresh butter, with a light sweetness.
